Breakfast restaurant finds success using their kitchen to turn out fried chicken at night

DENVER -- During the day, Morning Story is cranking out delicious breakfast food but in the afternoon the kitchen transforms into a new fried chicken concept.

"If we could bring in a little extra revenue in the evening it was perfect for us," said David Paulson, Morning Story General Manager.

Morning Story was having a record first quarter before COVID-19 forced restaurants to shutdown or switch to a carry-out model. Paulson said breakfast doesn't translate as well to the takeout/delivery model and business was hurting.

The restaurant closed for 11 weeks and when it reopened they were looking for ways to make up lost revenue. Since Morning Story is a brunch spot, it's only open until 2:30 p.m. and then the kitchen is sitting empty.

That's when the owners had the idea to use the kitchen in the evening for a completely different restaurant. They launched a fried chicken concept called Saucy Chix based off the ghost kitchen model. Although diners can enjoy breakfast at the restaurant, the fried chicken is only available for carryout and delivery. As an added bonus, it holds up well during deliveries.

“So it was all kind of based off of fried and comfort food, stuff that stays hot nicely in the box and delivers well," said Paulson.
