Birthday Party Ice Cream Pie Is So Much Better Than A Cake

When it comes to dessert preferences, there are two types of people — pie people and cake people. Although birthdays usually call for cake, if you’re a pie person, you may be tempted to buck tradition. If you just can’t choose, and you want your cake and pie (and to eat it, too!), this birthday party ice cream pie from Pillsbury is the answer to your prayers.

The recipe comes courtesy of Andrea Price of Grafton, Wisconsin, who submitted the delicious dessert to the 49thPillsbury Bake-Off Contest in 2019. While she did not win the contest with this entry, it sure looks like a winner to us!

“I have been making my own ice cream for over five years now, and lately have been experimenting with different and fun ways of serving it,” Price wrote in her recipe description. “I thought of this recipe for Birthday Party Ice Cream Pie to serve during one of my nephew’s birthdays because I thought it would be fun for the kids. Now, the adults are even requesting it as their birthday dessert, too!”

Did we mention this pie-cake hybrid also includes cookies? Yep, the crust is actually made of Pillsbury refrigerated sugar cookies, which you can find at various retailers and online. It retails on Walmart for around $2.50.

This recipe also features a homemade ice cream filling and plenty of colorful sprinkles, making it perfect for birthdays or any other celebratory occasion.

Making the filling requires only a few steps. As the recipe explains, start by mixing the whipping cream with the evaporated milk and salt. Then, beat with an electric mixer on high speed for two to three minutes or until the mixture begins to thicken.

With the beater on low speed, slowly add in the sweetened condensed milk and vanilla before shifting to high speed for three to four minutes or until soft peaks form. Finally, add in the candy sprinkles.

Once you’ve finished the filling, you can simply pour the whipped cream mixture over the cookie crust in a pie plate. Make sure to spread evenly so that every bite is filled with a good amount of that creamy goodness.

The tips section points out that you can use different colored sprinkles for different themes — for example, red and green sprinkles for Christmas. Red and pink would be ideal for Valentine’s Day, and green by itself would be great for St. Patrick’s Day. (Making mint chip ice cream for the filling isn’t a bad idea either!)

If you’re intimidated by the prospect of making your own ice cream, this no-churn version couldn’t be simpler. On the other hand, if you wanted to use store-bought ice cream, we’re guessing it would turn out just fine.

One final tip: Make sure to use a hot knife to cut into this delicious treat in order to make clean slices. When you’re ready to serve the pie, simply run your knife under hot water and wipe it dry with a towel before making a cut. Then, serve and enjoy!
